Packed with proteins, healthy fats, and carbohydrates, this pudding makes a perfect breakfast or dessert option. The star ingredients are chia seeds, a superfood known for its high fiber and protein content, and coconut milk, which lends a creamy texture while adding beneficial fats. Finally, the sweetness of strawberries rounds off the flavors perfectly.

What's great about this recipe is that it requires minimal prep time and can be made in advance. Simply mix, refrigerate overnight, and wake up to a refreshing, healthy treat!

Nutritionally, per serving, it delivers 1.79g of protein from the chia seeds, 3.55g from the coconut milk, and a trace amount from the strawberries. It also offers a balanced mix of total fats and carbohydrates, making it an ideal start to your day or a guilt-free dessert!

Ingredients:

  • 2 tbsp chia seeds
  • ⅓ cup coconut milk
  • 3 sliced strawberries

Optional

Add ½ tbsp of honey, cocoa powder, or matcha to add flavor/sweetness.

Directions:

  1. Put ⅓ cup of coconut milk in a glass, sealable jar.
  2. Add 2 tbsp of chia seeds to the milk.
  3. Mix the chia seeds and milk together.
  4. Add strawberries or other sweeteners of choice.
  5. Refrigerate overnight for 6-8 hours.
  6. Enjoy the next day!
